Welcome Rory. On the seat handles I believe they are all the same for all the seats and one of our members has produced some nice replacements you could check out here.

If you can find one, a 114 Hot Shot (turbonormalized) sounds like it would also be a possibility.

Welcome! A 112 for 2 people, a couple of bags, and full fuel is spot on. That would put you at about the 2650 gross. The 112 is balanced really nicely so even with the same load and minimum fuel, you can't really get out of the center of gravity. And yes, high density altitudes hurt...
